Health and Hazards of Chocolate

Chocolate comes in all shapes and sizes. It is one commodity that can be manipulated to suit any situation; Easter time sees chocolate bunnies and eggs, Christmas advent calendars count down the days until December 25th and Valentine’s Day gives rise to heart and rose shaped symbols of love – chocolate. A craving for cocoa can be satisfied by a wide variety of tempting chocolate delights.

The history of chocolate lends itself towards mysticism and decadence. The Mayan people worshiped the cacao tree; cacao being the Mayan word meaning “God Food”. The Mayans roasted and pounded the cacao seeds and brewed these into a spicy, bitter sweet drink with maize and Capsicum peppers (chilies). The drink was reserved for ceremonies or for the religious and wealthy elite among the tribe. It was the Aztecs, who lived further up North from the Mayans, who considered cocoa beans to be an aphrodisiac, a reputation that has followed chocolate into the 21st century.

Today there is ongoing debate surrounding the health benefits of chocolate. A recent revelation stated that chocolate consumed daily in small quantities could reduce the odds of cardiovascular problems as well as have a significant effect on high blood pressure. Brian Buijsse, a nutritional epidemiologist and his team at the German Institute of Human Nutrition in Nuthetal, followed over 19 000 adults over a period of 10 years. The study included checkups and recurring questionnaires regarding the subjects’ chocolate consumption. The results revealed that people who ate an average of 7.5 grams of chocolate per day were at a 27% lower risk of heart attacks and were at a 47% lower stroke risk. They also had lower blood pressure than those who ate less chocolate. The researchers attributed these results to the high level of flavanols in chocolate. Flavanols are antioxidants which are more copious in chocolate with a higher cocoa level such as dark chocolate. Buijsse however does stress the point that eating as part of a balanced and healthy diet is important.

This is where chocolate may become a hazard to some, according to Dr. Bankole A Johnson, a researcher of addictive behaviour points out some surprising facts about chocolate. According to Johnson the ingredients in chocolate have a significant effect of the chemistry of the brain; chocolate contains cannabinoids, the compounds that cause the high from marijuana. However the concentration of these cannabinoids is too low to have an effect and it’s the caffeine, tyramine and tryptophan in chocolate that the brain converts into dopamine and serotonin; feel good chemicals. There is more to enjoying chocolate’s rich and creamy sweetness and chemicals. We are conditioned to recognise that the opening of a chocolate wrapper is a prelude to something enjoyable.

It seems though that the only real hazard to be associated with chocolate is the risk of it becoming too big a part of one’s diet. If eaten in small doses chocolate seems to be good for one’s overall health. If the consumer has self-control, and leads an active lifestyle, chocolate can be enjoyed almost without any guilty conscious. This is good news for chocolate lovers around the globe!

Soup is a Wonder Food

Soup is a wonder food. It is not only nourishing and delicious but also typically easy to make and inexpensive. You don’t have to be a carnivore to enjoy soup. There are a myriad of vegetarian and vegan recipes out there that are just as satisfying and hearty as healthy recipes for soup that include some type of meat.

I no longer purchase cans of soup. They are full of sodium and simply do not have the same taste or texture as homemade soups. Plus, the canning process kills most of the nutrients that are simmering loud and clear in freshly made soups. Let’s face it, there is nothing like the aroma of a pot of simmering soup to fill your house and leave you yearning for a steaming bowl of this curer of all ills.

In 1993, University of Nebraska Medical Center researcher, Stephen Rennard, MD, found that his wife’s family recipe for chicken soup had anti-inflammatory effects and actually slowed the development of cold symptoms.

The soup definitively increased the cold-fighting ability of cells when they were bathed in chicken soup. The hot chicken soup also improved the movement of mucus and shortened the life of a cold. Usually pasta is made of wheat or rice flour, although some varieties are made of beans and soy. Noodles may be of different shapes and sizes – flat or round, in the form of rods (tubes), or spider net or bar. They can be hard or soft, fresh or dried, with the addition of eggs and without them. Sometimes in noodles is added potash (potassium carbonate), in order to prevent them from mold in a hot and humid climate.

As every country have its own kinds of noodles, tangling in them – a piece of cake. To prevent this from happening, let’s get acquainted with the most popular types of pastas.

Rice Paper (pancakes). It is incredibly thin sheets of dough made from rice flour and water. They can be round or triangular. Used to be prepared for the first time in China, Thailand, and most importantly, the Vietnamese kitchen used them to cook Spring Rolls, or wrap pieces of meat or fish before hot. Ground is usually made of vegetables, or vegetables with shrimp, or pork – or from all together. First rice pancakes have to be dipped in warm water, for softening. Then rolled up rolls and fried or boiled in the fryer.

Rice noodles. These translucent or white strip width from a few millimeters to three inches are very popular in China.

Chinese wheat noodles. These creamy-beige or white noodles may vary in thickness, and also be round or flat, but necessarily long. They are prepared from wheat flour, salt and water.

Ramen. The most famous in the world view of Japanese wheat noodles. It is as thin as vermicelli, and long, sold in the form of briquettes.

Soy noodles. Noodles made from soy – looking thin and flat, like a rubber band. They are made of pressed bean curd, so it is rich in protein and other nutrients.

Fettuccine and linguine are pasta that is shaped like ribbons.

One popular Italian pasta group is ravioli and tortellini and manicotti. This group differs from other ones because this pasta has a stuffing (vegetables, cheese, ham etc.)

Tapioca noodles. Perhaps can be of one of the most varied forms: from grains and pasta spirals to varying degrees and length of the plane. It is eaten in Asia and Africa: fried together with sharp and aromatic sauces, and in Indonesia and Malaysia, it is mixed with red beans, coconut milk and sugar syrup. It turns to be a traditional dessert.

Soba. This is a well-known Japanese version of pasta. Soba is flat and thin, made from a mixture of buckwheat and wheat flour. Soba has a nutty flavor and color from beige to brown. Sometimes Japanese add in soba green tea, making it acquiring a greenish color. It is usually cooked in salted boiling water, steep 5-7 minutes. It is very popular in the summer of as it’s served cold.
